Whipped Cream

1 cup heavy cream

1 Tablespoon confectioner sugar

1 teaspoon vanilla extract

In a large mixing bowl at medium speed, whip cream until soft peaks start forming.  Turn mixer on slow speed, add the confectioners sugar and vanilla. Return mixer to medium high speed and mix until thick and peaks form (do not over mix).
