Mocha Buttercream

6 Tablespoons cup water

6 Tablespoons instant coffee

6 ounces unsweetened chocolate (pre-melt chocolate in the microwave) (follow package directions for melting)

Combine above in a small sauce pan, stir- melt chocolate until smooth. *Suggestion- use a wire whip for string.

3 cups butter (1 & 1/2 lbs.)

5 cups confectioner sugar (sift if lumpy)

6 egg yolks (pasteurized)

2 teaspoons vanilla

At low speed of mixer, incorporate ingredients together, add chocolate paste mixture. Turn mixer on medium / high speed and whip until fluffy.

*Note: Use pasteurized shelled eggs for any recipe calling for recipes that will not be cooked.

*Note: There is a difference between pasteurized and pasture raised eggs.
