Prepare one day ahead of time before assembling cake and place in the refrigerator overnight to thicken.
1 Cup Heavy cream
8 ounces semi-sweet chocolate chips
1 ounce unsweetened chocolate
- Combine above in a medium sauce pan. Stir regularly until mixture comes to a boil. Turn off and remove from heat. When cool put it in a container and refrigerate.
- About 1 an 1/2 hours before you are ready to assemble the cake, take out the mouse and let it set at room temperature. Place mixture into a mixing bowl, and with whipping attachment whip up mixture until fluffy. Do not over mix.
- Set mixture aside in the refrigerator until ready to use.
